WHere is a simplified version of a beverage featured on our latest menu. It's a large-volume pre-mixed that is bursting with tastes of a Christmas time, which makes it excellent for a festive gathering. Reserve the remaining syrup for brunch beverages, sweets, or for additional servings of bikinis.

Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Place every components in a pan, bring to a gentle boil, agitating until the sugar dissolves. Next, take off the burner and let it to cool down entirely. Pour into an sealable bottle, seal keeping it in the fridge, where it will keep for up to a month.
Preparing the Batch Mix: Pour every liquids into one sizeable container, allow it to infuse for an hour, then strain , ideally through muslin, so it's completely strained.
When ready to serve: Pour 85ml from the batch mix to a cocktail shaker containing ice, and stir carefully for a minute to cool it down. Filter into an cold coupe glass or equivalent, top with a few cranberries and complete it using a light spray with the mandarin essence over the top.
